How To Cook Cauliflower

A lot of people write me asking how to cook cauliflower.  There are so many ways to prepare cauliflower that I'm listing a whole bunch of recipes below for you to choose from.

Cauliflower is such a versatile vegetable and it's a low carber's dream.  It can imitate mashed potatoes, rice and can even be disguised as a pizza crust.  The possibilities are absolutely endless!

If you just want to cook it plain as a side dish, my preferred method is to microwave it.  Place about 2 cups of florets in a glass baking dish.  Add a tablespoon of water, cover and then nuke on high.  For a tender crisp result cook for 3 minutes, stirring half-way through.  For a very tender result cook for 5 minutes, stirring half-way through.  Either way, after the cooking time, let the dish stand for a couple of minutes.

If you want to do a whole head at once, just remove the core of the cauliflower and place it in a 2-quart glass casserole dish, add 2 tablespoons of water and cook the same way as mentioned above.

Looking for more information on how to cook cauliflower? Just boil it! Boiled cauliflower has a much milder flavor.  Add 4 quarts of water to a stock pot, add 1-1/2 tablespoons of salt and the juice of one lemon and bring it to a boil.  Carefully add the whole head and place it stem side up in the pot.  Boil it, uncovered for 10 to 15 minutes.  You can check it for doneness  by sticking a bamboo skewer in the stalk.  If it goes in easily, it's done.

If you separate the florets before boiling, the cauliflower will be ready in 3 to 5 minutes.  Drain well.

And finally here's how to steam cauliflower.  Put a steaming basket in a pot containing 1-2 inches of water.  Bring to a boil.  Add cauliflower florets, cover and cook for 5-10 minutes or if you do a whole head, as long as 20-25 minutes.
