Here is a low carb tuna recipe that can be used as an appetizer with veggies or crackers. All you need in the pantry is one can of tuna and you're off to the races!
This is so good!! It's fancy enough to serve to company. Just stuff it in celery ribs or hollowed out cherry tomatoes. This can also be served with crackers (for your friends who still eat those).
I love it as a mid-day snack. I just spread it on Romaine leaves and roll ‘em up. If members of your family still eat sandwiches, this is an awesome spread too!

Makes 16 servings
Serving Size: 3 tbsp

INGREDIENTS:
1 can flaked white tuna in olive oil, do not drain
1 large apple, peeled, cored and very finely chopped
2 large celery stalks, finely chopped
1 8oz package of cream cheese
3 tsp curry powder
¼ tsp black pepper
Salt to taste
DIRECTIONS:
Bring cream cheese to room temperature. In a medium bowl, beat the cream cheese with the curry powder, pepper and salt until well blended.
In another bowl, combine the tuna, apple, and celery.
Add the tuna mixture to the cream cheese and gently mix thoroughly.
Cover and refrigerate until ready to serve.
It would also be quite delicious with some finely chopped walnuts but I wanted to keep the carb count a little lower.
