I wanted a muffin in a minute but I didn't want to make it in a mug and I wanted to make enough for two people.
This recipe is quick and delicious. You could add a sweetener and cinnamon or you could add herbs and spices to suit your taste.
I enjoy it plain with butter. Toasted really enhances the nutty flavor. You could add sugar free jams and preserves too.

I made grilled cheese "sandwiches" for brunch one morning. So tasty!
Serves 2
PER SERVING:

INGREDIENTS
1/2 cup ground flax meal
1 tsp baking soda
1/4 tsp sea salt
2 eggs, lightly beaten
2 tsp avocado oil
DIRECTIONS
Thoroughly mix all of the ingredients together.
Pour into a greased 8 x 6-inch glass dish.
Microwave on high for 1 minute. Let rest for 1 minute. Microwave on high for 30 seconds longer or until set in the middle. Let cool for a few minutes.
Cut into 4 pieces.
First I grilled one side of the MIM in some bacon grease for a couple of minutes. I kept the heat on medium / low because I didn't want to scorch the slices.
Then I flipped the slices over.
I divided 2 oz of cheddar between the four slices. Again I just let the slices grill for a couple of minutes until the cheese softened a little.
Then I sandwiched the slices and let them heat through until the cheese was melted.
That's all there was to it. Of course the nutritional breakdown, once you add the cheese and factor in the bacon grease, changes quite a bit.
