I love rutabaga recipes. I think it's a much under-valued vegetable. Often over cooked until it tastes awful. However, with a little imagination you can make delicious sides with rutabaga.
Many people mix up turnips for rutabagas. Turnips are much smaller and are white fleshed, while the latter is much yellower.
Typically, rutabaga is covered in wax for storage as shown above.
The turnip has a purple blush to it. It is said that rutabaga was likely a cross between a cabbage and a turnip!

RUTABAGA CARROT MASH
Makes 10 (1/2 cup) servings
PER SERVING:
80 Calories

INGREDIENTS
1 large rutabaga, diced
3 large carrots, diced
1/2 cup minced onion
1/2 cup butter
salt & pepper to taste
DIRECTIONS
Boil rutabaga and carrots until very tender.
Meanwhile, melt butter over low heat and add the onion. Do not brown, just simmer until softened and the boiling veggies are done.
Drain boiled veggies and return to pot adding the butter and onion mixture.
Use submersible blender to whip the veggies until fluffy. Add salt and
pepper.
